ORANGE, KIWI AND HONEY JUICE

INGREDIENTS

  • 2 eggs
  • 120 g pastry flour
  • 240 g almond milk
  • 1 tbsp honey
  • Pinch of salt
  • 400 ml vegetable cream
  • 200 g strawberries
  • Mint or spearmint leaves
  • Olive oil

METHOD

  1. Mix the eggs, flour, milk, milk, honey and a pinch of salt, and beat with a whisk until well blended.
  2. In a frying pan, add a drizzle of oil and spread with kitchen paper. Pour a medium-sized ladleful of our batter and cook until the batter starts to bubble. Turn with a spatula to brown the other side.
  3. Using a food processor with whisk, whip the cold cream on medium-high speed. Set aside.
  4. Fold our pancakes in two folds. We put a couple of crepes on each plate. Add cream, some sliced strawberries, plenty of honey and a mint leaf or mint – the favourite breakfast among the mini Honeyenials in the house!
