INGREDIENTS
- 2 eggs
- 120 g pastry flour
- 240 g almond milk
- 1 tbsp honey
- Pinch of salt
- 400 ml vegetable cream
- 200 g strawberries
- Mint or spearmint leaves
- Olive oil
METHOD
- Mix the eggs, flour, milk, milk, honey and a pinch of salt, and beat with a whisk until well blended.
- In a frying pan, add a drizzle of oil and spread with kitchen paper. Pour a medium-sized ladleful of our batter and cook until the batter starts to bubble. Turn with a spatula to brown the other side.
- Using a food processor with whisk, whip the cold cream on medium-high speed. Set aside.
- Fold our pancakes in two folds. We put a couple of crepes on each plate. Add cream, some sliced strawberries, plenty of honey and a mint leaf or mint – the favourite breakfast among the mini Honeyenials in the house!
