Honey, like other “living foods”, also evolves!
When the cold weather arrives, its natural sugars lose their solubility and tend to crystallise, making it thicker, more opaque, and clearer, although this tendency is not the same for all honeys! Those richer in fructose, such as oak honeys, can remain liquid for ever! :O
